Ingredients

2 cups cooked chicken, shredded

½ cup buffalo sauce

1 cup shredded cheese (cheddar, mozzarella, or a mix)

2 green onions, chopped

12 egg roll wrappers

Instructions

  1. In a bowl, mix shredded chicken, buffalo sauce, shredded cheese, and green onions until well combined.
  2. Place an egg roll wrapper on a flat surface with one corner facing you. Add about 2 tablespoons of filling to the center.
  3. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a dab of water. Repeat with remaining wrappers.
  4. Preheat the air fryer to 375°F (190°C).
  5. Lightly spray each egg roll with cooking spray and place them in the air fryer basket in a single layer.
  6. Air fry for 10–12 minutes, flipping halfway, until golden brown and crispy.
  7. Let cool for 1–2 minutes before serving. Serve with ranch or blue cheese dressing and celery sticks.
