2 cups cooked chicken, shredded
½ cup buffalo sauce
1 cup shredded cheese (cheddar, mozzarella, or a mix)
2 green onions, chopped
12 egg roll wrappers

Instructions
- In a bowl, mix shredded chicken, buffalo sauce, shredded cheese, and green onions until well combined.
- Place an egg roll wrapper on a flat surface with one corner facing you. Add about 2 tablespoons of filling to the center.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a dab of water. Repeat with remaining wrappers.
- Preheat the air fryer to 375°F (190°C).
- Lightly spray each egg roll with cooking spray and place them in the air fryer basket in a single layer.
- Air fry for 10–12 minutes, flipping halfway, until golden brown and crispy.
- Let cool for 1–2 minutes before serving. Serve with ranch or blue cheese dressing and celery sticks.
Notes
- Don’t overfill wrappers to avoid bursting while cooking.
- Cover unused wrappers with a damp towel to prevent drying.
- Freeze before or after cooking for make-ahead convenience.
