Ingredients
- Zest and juice of 1 lemon
- 2 tbsp mayonnaise
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 500 g boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp butter, softened
- 1 tbsp fresh parsley, chopped
- 1 tbsp lemon juice (for lemon butter)
- Optional: extra lemon juice to serve
Instructions
- In a bowl, whisk lemon zest, lemon juice, mayo, olive oil, garlic, oregano, paprika, salt, and pepper.
- Add chicken pieces and coat well. Marinate for 30 minutes at room temperature.
- Thread chicken onto skewers tightly but with slight spacing at ends.
- Air fry at 200°C (400°F) for 13 minutes, brushing with remaining marinade.
- Meanwhile, mix butter, parsley, lemon juice, and seasoning in a small bowl.
- After 13 minutes, flip skewers, baste with lemon butter, and cook 1 more minute. Flip and baste again, cook an additional minute until golden and chicken reaches 74°C (165°F).
- Brush with remaining butter and squeeze fresh lemon juice over skewers before serving.
Notes
- Use chicken breast if preferred, but reduce cook time slightly.
- Add chili flakes to butter for a hint of spice.
- Skewers can be grilled for a smoky version.
- Marinated chicken can be frozen for up to 1 month before cooking.
- Serve with orzo, rice, or roasted vegetables for a complete meal.
