These Air Fryer Lemon Butter Chicken Skewers are juicy, citrusy, and rich, with a bright marinade and buttery finish. Cooked to perfection in the air fryer, they’re quick, flavorful, and weeknight-friendly.

Ingredients

  • Zest and juice of 1 lemon
  • 2 tbsp mayonnaise
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 500 g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp butter, softened
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice (for lemon butter)
  • Optional: extra lemon juice to serve

Instructions

  1. In a bowl, whisk lemon zest, lemon juice, mayo, olive oil, garlic, oregano, paprika, salt, and pepper.
  2. Add chicken pieces and coat well. Marinate for 30 minutes at room temperature.
  3. Thread chicken onto skewers tightly but with slight spacing at ends.
  4. Air fry at 200°C (400°F) for 13 minutes, brushing with remaining marinade.
  5. Meanwhile, mix butter, parsley, lemon juice, and seasoning in a small bowl.
  6. After 13 minutes, flip skewers, baste with lemon butter, and cook 1 more minute. Flip and baste again, cook an additional minute until golden and chicken reaches 74°C (165°F).
  7. Brush with remaining butter and squeeze fresh lemon juice over skewers before serving.

Notes

  • Use chicken breast if preferred, but reduce cook time slightly.
  • Add chili flakes to butter for a hint of spice.
  • Skewers can be grilled for a smoky version.
  • Marinated chicken can be frozen for up to 1 month before cooking.
