Ingredients

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp apple pie spice

1/2 cup unsalted butter, melted

2 large eggs

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup milk

1 tsp vanilla extract

1/2 cup apple cider, reduced to 1/4 cup

For the topping: 1/4 cup granulated sugar + 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan with non-stick spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and apple pie spice.
  3. In another bowl, mix melted butter, eggs, brown sugar, granulated sugar, milk, and vanilla extract.
  4. Stir in the reduced apple cider.
  5. Gently fold the wet mixture into the dry ingredients until just combined.
  6. Spoon the batter into the donut pan, filling each cavity about 3/4 full.
  7. Bake for 10–12 minutes, until golden and springy to the touch.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
  9. While warm, dip each donut in melted butter (optional) and roll in the cinnamon sugar topping.
  10. Serve fresh, ideally warm.
