Ingredients

For the Apples:

  • 2 medium Granny Smith apples, peeled, cored, and diced
  • 2 tablespoons cake flour

Cinnamon Sugar Mixture:

  • ¼ cup granulated sugar
  • 2 teaspoons ground cinnamon

Bread Batter:

  • 1 ½ cups cake flour
  • ½ tablespoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9 × 5 inch loaf pan with parchment paper, leaving overhang for easy removal.
  2. Dice apples and toss with 2 tablespoons cake flour; set aside.
  3. Mix ¼ cup sugar and 2 teaspoons cinnamon for the cinnamon-sugar mixture; set aside.
  4. Whisk together flour, baking powder, cinnamon, and salt in a medium bowl.
  5. In a large bowl, stir melted butter with granulated and brown sugar until smooth.
  6. Add eggs, milk, and vanilla; mix until fully combined.
  7. Gradually fold in dry ingredients until just combined.
  8. Gently fold in coated diced apples.
  9. Pour half of the batter into the prepared pan, sprinkle half the cinnamon-sugar mixture over it, then layer the remaining batter and cinnamon-sugar mixture on top.
  10. Bake 40 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  11. Cool in pan 10 minutes, then lift out and cool completely on a wire rack before slicing.
