1/2 cup grated Parmesan cheese

1 cup breadcrumbs

2 eggs

1 teaspoon garlic powder

Salt and pepper, to taste

Olive oil spray

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, salt, and pepper. Mix until evenly blended.
  3. Roll mixture into small bite-sized balls and place on the prepared baking sheet.
  4. Lightly spray with olive oil for crispiness.
  5. Bake for 20–25 minutes, or until golden brown and crispy on the outside.
  6. Cool slightly before serving warm.

Notes

  • Swap cheddar for mozzarella or pepper jack for a different flavor.
  • Use panko breadcrumbs for extra crunch.
  • Add red pepper flakes for a hint of spice.
  • Replace broccoli with cauliflower for variation.
  • Add fresh herbs like parsley or chives for extra freshness.
