Ingredients
- ¾ cup coconut sugar or light brown sugar
- ½ cup unsalted butter, melted and slightly cooled
- 1 large egg, at room temperature
- 2 ripe bananas, mashed (about 1 cup)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together coconut sugar and melted butter until smooth.
- Add the egg and mix well, then stir in mashed bananas and vanilla extract.
- In a separate bowl, combine flour, cocoa powder, baking powder, and salt.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Fold in the dark chocolate chips.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow to cool completely in the pan before slicing and serving.
Notes
- Add chopped walnuts or almonds for crunch.
- Use very ripe bananas for stronger flavor.
- Increase chocolate chips to ¾ cup for a sweeter treat.
- Add a pinch of cinnamon for warmth.
