Moist and chewy banana bread brownies combining the sweetness of ripe bananas with rich cocoa and dark chocolate chips. A simple and satisfying twist on two classic treats.

Ingredients

  • ¾ cup coconut sugar or light brown sugar
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 large egg, at room temperature
  • 2 ripe bananas, mashed (about 1 cup)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together coconut sugar and melted butter until smooth.
  3. Add the egg and mix well, then stir in mashed bananas and vanilla extract.
  4. In a separate bowl, combine flour, cocoa powder, baking powder, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in the dark chocolate chips.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow to cool completely in the pan before slicing and serving.

Notes

  • Add chopped walnuts or almonds for crunch.
  • Use very ripe bananas for stronger flavor.
  • Increase chocolate chips to ¾ cup for a sweeter treat.
  • Add a pinch of cinnamon for warmth.
