Ingredients
- 1 pound lean ground beef
- 1 pound russet potatoes, chopped small
- 1/2 white onion, chopped
- 1 teaspoon olive oil
- 1/4 cup water
- 2 teaspoons yellow mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt, to taste
- Black pepper, to taste
- 1 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 1/4 cup ketchup
- 1/4 cup dill pickles, chopped
- 1 tablespoon dill pickle juice
- 1 vine tomato, chopped
- A handful of chopped white onion
- A handful of shredded iceberg lettuce
- 1/4 cup dill pickle chips
Instructions
- Preheat oven to 375°F (190°C).
- Wash and chop potatoes into small bite-sized pieces, keeping the skin on.
- Heat a pan over medium heat, add olive oil, then add potatoes and water. Season with salt and pepper and cook while stirring until softened. Transfer to a baking dish.
- In the same pan, cook ground beef with chopped white onion until beef is mostly cooked and onion is soft. Season with salt, pepper, garlic powder, onion powder, and mustard. Stir to combine.
- Add the beef mixture to the baking dish with the potatoes and mix together.
- Sprinkle shredded cheddar cheese over the top, cover with foil, and bake for 15 minutes until cheese is melted.
- While baking, mix mayonnaise, ketchup, chopped pickles, and pickle juice to make the sauce.
- Remove casserole from oven, uncover, and drizzle sauce over the top.
- Top with chopped tomato, additional onion, shredded lettuce, and pickle chips before serving.
