Ingredients

  • 1 lb (450g) ground beef (80/20 lean-to-fat ratio)
  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (or cheese blend)
  • 1 cup BBQ sauce (preferably smoky-sweet)
  • 4 sub rolls, toasted

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until just combined.
  2. Shape into golf ball-sized meatballs.
  3. Heat a skillet over medium-high heat and cook the meatballs, turning occasionally, for 12–15 minutes or until fully cooked.
  4. While the meatballs cook, warm the BBQ sauce in a saucepan.
  5. Once cooked, transfer the meatballs into the saucepan and toss to coat in BBQ sauce.
  6. Place sauced meatballs in toasted sub rolls and top with shredded cheese. Let the heat melt the cheese slightly.
  7. Drizzle with extra BBQ sauce if desired and serve hot.
