Ingredients
- 4 slices thick bread (sourdough or Texas toast)
- 4 large eggs
- 4 slices breakfast sausage (or meat alternative)
- 4 slices cheddar cheese (or preferred cheese)
- 2 tablespoons butter
- 1 tablespoon milk
- Salt and pepper, to taste
Instructions
- In a bowl, whisk eggs with milk, salt, and pepper. Scramble in a nonstick skillet over medium-low heat until just set. Set aside.
- Butter one side of each slice of bread.
- On a clean surface, place two slices of bread buttered side down. Layer with cheese, scrambled eggs, sausage, and more cheese. Top with remaining bread, buttered side up.
- Heat a skillet over medium heat. Grill sandwiches for 3–4 minutes per side until golden brown and cheese is melted, pressing gently with a spatula.
- Slice diagonally and serve hot.
Notes
- Use sturdy bread to hold up well during grilling.
- Vegetarian? Use plant-based sausage or extra veggies.
- Customize with spicy cheese, avocado, or sautéed vegetables.
