Ingredients

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground chicken and cook while breaking it apart until no longer pink, about 5–7 minutes.
  2. Add the chopped onion and cook for 3–4 minutes until softened.
  3. Stir in the garlic and Cajun seasoning and cook for 1 minute until fragrant.
  4. Add tomato paste and mix until the chicken is well coated.
  5. Pour in the chicken broth, tomato sauce, and Worcestershire sauce. Stir well to combine.
  6. Reduce heat to low and simmer uncovered for 8–10 minutes until thick and spoonable. Add optional brown sugar if desired and season with salt.
  7. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
  8. Slowly whisk in milk and cook for 4–5 minutes until the sauce thickens.
  9. Reduce heat to low and stir in cheddar cheese and paprika until smooth and creamy. Season with a pinch of salt.
  10. Butter the cut sides of the brioche buns and toast them in a skillet or under a broiler until golden.
  11. Spoon the Cajun chicken filling onto the bottom bun.
  12. Drizzle the warm cheese sauce over the chicken and finish with freshly ground black pepper.
  13. Place the top bun on the sandwich and serve immediately.
