Ingredients

  • 1 cup unsalted butter (226 g), melted
  • 1 cup granulated sugar (200 g)
  • 1 cup packed brown sugar (220 g)
  • 4 large eggs

  • 1 cup all-purpose flour (125 g)
  • 3/4 cup unsweetened cocoa powder (75 g)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup creamy peanut butter (240 g)
  • 3/4 cup caramel sauce (180 ml)
  • 1/2 cup semi-sweet chocolate chips (85 g)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a mini muffin pan or line with mini cupcake liners.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and glossy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Stir in the chocolate chips.
  7. Spoon the batter into the mini muffin cups, filling each about three-quarters full.
  8. Bake for 12 to 15 minutes until the edges are set and the centers remain slightly soft.
  9. Remove from the oven and allow the brownie bites to cool for about 5 minutes.
  10. Use the back of a spoon to press a small indentation in the center of each brownie bite.
  11. Fill each indentation with about 1 teaspoon peanut butter and drizzle caramel sauce over the top.
  12. Allow the brownie bites to cool completely before serving so the toppings set.
