Ingredients
- 1 cup unsalted butter (226 g), melted
- 1 cup granulated sugar (200 g)
- 1 cup packed brown sugar (220 g)
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (125 g)
- 3/4 cup unsweetened cocoa powder (75 g)
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 cup creamy peanut butter (240 g)
- 3/4 cup caramel sauce (180 ml)
- 1/2 cup semi-sweet chocolate chips (85 g)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a mini muffin pan or line with mini cupcake liners.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and glossy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, salt, and baking powder.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Stir in the chocolate chips.
- Spoon the batter into the mini muffin cups, filling each about three-quarters full.
- Bake for 12 to 15 minutes until the edges are set and the centers remain slightly soft.
- Remove from the oven and allow the brownie bites to cool for about 5 minutes.
- Use the back of a spoon to press a small indentation in the center of each brownie bite.
- Fill each indentation with about 1 teaspoon peanut butter and drizzle caramel sauce over the top.
- Allow the brownie bites to cool completely before serving so the toppings set.

- Do not overbake the brownies to keep them fudgy and moist.
- A small pinch of sea salt on top creates a delicious salted caramel flavor.
