Cheesy Mashed Potato Puffs are crispy on the outside, soft and cheesy on the inside, and the perfect way to transform leftover mashed potatoes into a new, irresistible snack or side dish.

Ingredients

3 cups mashed potatoes (leftover or freshly made)

1 cup shredded cheddar cheese

2 large eggs

1/4 cup breadcrumbs (plus extra for coating)

1/4 cup grated Parmesan cheese

2 tbsp unsalted butter, melted

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine mashed potatoes, cheddar cheese, eggs, breadcrumbs, Parmesan, garlic powder, onion powder, melted butter, salt, and pepper.
  3. Mix until well combined and easy to shape.
  4. Roll into 1-inch balls using hands or a small scoop.
  5. Coat each ball in extra breadcrumbs or Parmesan for a crispy finish.
  6. Place on the baking sheet and bake for 15–20 minutes, until golden and crispy.
  7. Cool slightly before serving.

Notes

  • Chilled, firm mashed potatoes work best for shaping.
  • Add chives, green onions, or paprika for extra flavor.
  • Cheddar can be swapped with mozzarella, pepper jack, or Gouda.
  • Serve with dips like sour cream, ranch, or garlic aioli.
