3 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheddar cheese
2 large eggs
1/4 cup breadcrumbs (plus extra for coating)
1/4 cup grated Parmesan cheese
2 tbsp unsalted butter, melted
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine mashed potatoes, cheddar cheese, eggs, breadcrumbs, Parmesan, garlic powder, onion powder, melted butter, salt, and pepper.
- Mix until well combined and easy to shape.
- Roll into 1-inch balls using hands or a small scoop.
- Coat each ball in extra breadcrumbs or Parmesan for a crispy finish.
- Place on the baking sheet and bake for 15–20 minutes, until golden and crispy.
- Cool slightly before serving.
Notes
- Chilled, firm mashed potatoes work best for shaping.
- Add chives, green onions, or paprika for extra flavor.
- Cheddar can be swapped with mozzarella, pepper jack, or Gouda.
- Serve with dips like sour cream, ranch, or garlic aioli.
