1 cup shredded mozzarella cheese
½ cup grated parmesan cheese
1 cup panko breadcrumbs
2 large eggs
½ tsp salt
½ tsp black pepper
2 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix mozzarella and parmesan until well combined.
- In a separate bowl, whisk eggs with salt and pepper.
- Shape small portions of the cheese mixture into golf ball-sized bites.
- Dip each bite in the egg wash, then roll in panko breadcrumbs to coat.
- Place coated bites on the prepared baking sheet.
- Bake for 15–20 minutes, until golden brown and crisp.
- Serve warm, garnished with parsley if desired.
Notes
- Swap mozzarella with cheddar or gouda for a different flavor.
- Add herbs like oregano or red pepper flakes for extra seasoning.
- For gooier centers, stuff bites with small cheese cubes before coating.
- Reheat leftovers in a 350°F oven for 8–10 minutes to restore crispness.
