Ingredients
- 1 pound ground beef (or ground turkey or plant-based alternative)
- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup chipotle sauce (adjust to taste)
- 6 large flour tortillas
- Salt and pepper to taste
- Optional toppings: diced tomatoes, chopped green onions, cilantro
Instructions
- Preheat oven and bake tater tots according to package directions until golden and crispy. Lightly crush them once done.
- In a skillet over medium heat, brown ground beef. Season with salt and pepper, then drain excess grease.
- In a large bowl, mix cooked beef, crushed tater tots, shredded cheddar, and Monterey Jack cheese.
- Warm tortillas in a dry pan or microwave until soft and pliable.
- Spoon filling into the center of each tortilla. Add chipotle sauce and a dollop of sour cream.
- Fold in sides and roll tightly into burritos. Place seam-side down in a baking dish.
- Sprinkle extra cheese on top and bake at 350°F for 5–7 minutes, until cheese is melted and bubbly.
- Add optional toppings and serve hot.
Notes
- Swap beef for black beans or pinto beans for a vegetarian version.
- Use spicy chipotle sauce or jalapeños for more heat.
- Add sautéed onions or bell peppers for extra flavor.
- Freeze wrapped burritos for up to 2 months for a quick meal later.
