  • Total Time: 55 minutes
  • Yield: 6 to 8 servings

Ingredients

1 lb ground beef

2 cups cooked white or brown rice

3 bell peppers (any color), chopped

1 medium onion, chopped

2 cloves garlic, minced

1 (15 oz) can crushed tomatoes or tomato sauce

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp Italian seasoning

Salt and black pepper to taste

1 1/2 cups shredded cheddar or mozzarella cheese

1 tbsp olive oil

Optional: chopped parsley or green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion and bell peppers for 5–7 minutes until soft.
  3. Add minced garlic and cook for 1 minute. Add ground beef and cook until browned, draining excess fat.
  4. Stir in crushed tomatoes, tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper. Simmer for 5–10 minutes.
  5. Mix in the cooked rice and combine well.
  6. Transfer mixture to prepared baking dish and spread evenly.
  7. Top with shredded cheese, cover with foil, and bake for 20 minutes.
  8. Uncover and bake an additional 10–15 minutes until cheese is bubbly and golden.
  9. Let rest for 5 minutes before serving. Garnish with parsley or green onions if desired.

Notes

  • Use ground turkey or chicken for a lighter option.
  • Mix in corn, black beans, or jalapeños for added texture or heat.
  • Try pepper jack cheese for a spicy twist.
  • Ensure rice is fully cooked before mixing in.
  • Drain meat and sauté veggies well to prevent excess moisture.
