Crispy homemade frozen chicken nuggets with a juicy, tender interior, perfect for meal prep and quick meals straight from the freezer.

Ingredients

  • 1 kg chicken mince
  • 3 teaspoons salt (18 g)
  • 1 1/2 teaspoons white pepper (8 g)
  • 1 tablespoon garlic powder (10 g)
  • 8 tablespoons ice water (120 ml)
  • 7 tablespoons cornflour (100 g)
  • 1 cup breadcrumbs (150 g)
  • 1 cup all-purpose flour (120 g)
  • 2 eggs
  • 2 tablespoons water
  • 1 1/2 cups breadcrumbs (180 g)

Instructions

  1. Place chicken mince in a large bowl and add salt, white pepper, and garlic powder. Mix well.
  2. Gradually add ice water while mixing to keep the mixture moist.
  3. Add cornflour and mix until smooth and slightly sticky.
  4. Fold in breadcrumbs to give structure to the mixture.
  5. Shape into small nuggets and place on a parchment-lined tray.
  6. Prepare coating stations: flour in one bowl, eggs mixed with water in another, and breadcrumbs in a third.
  7. Coat each nugget in flour, dip in egg mixture, then coat with breadcrumbs.
  8. Place coated nuggets on a tray in a single layer.
  9. Freeze for 2–3 hours until solid.
  10. Transfer to freezer-safe bags for storage.
  11. Cook directly from frozen by frying, baking, or air frying until golden and fully cooked.
