- 1 kg chicken mince
- 3 teaspoons salt (18 g)
- 1 1/2 teaspoons white pepper (8 g)
- 1 tablespoon garlic powder (10 g)
- 8 tablespoons ice water (120 ml)
- 7 tablespoons cornflour (100 g)
- 1 cup breadcrumbs (150 g)
- 1 cup all-purpose flour (120 g)
- 2 eggs
- 2 tablespoons water
- 1 1/2 cups breadcrumbs (180 g)
Instructions
- Place chicken mince in a large bowl and add salt, white pepper, and garlic powder. Mix well.
- Gradually add ice water while mixing to keep the mixture moist.
- Add cornflour and mix until smooth and slightly sticky.
- Fold in breadcrumbs to give structure to the mixture.
- Shape into small nuggets and place on a parchment-lined tray.
- Prepare coating stations: flour in one bowl, eggs mixed with water in another, and breadcrumbs in a third.
- Coat each nugget in flour, dip in egg mixture, then coat with breadcrumbs.
- Place coated nuggets on a tray in a single layer.
- Freeze for 2–3 hours until solid.
- Transfer to freezer-safe bags for storage.
- Cook directly from frozen by frying, baking, or air frying until golden and fully cooked.
