Ingredients
- 1 kg chicken pieces (thighs or drumsticks)
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced into rounds
- 2 medium potatoes, peeled and cut into chunks
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup green peas
- 2 medium tomatoes, grated or finely chopped
- 2 tablespoons tomato paste
- 3 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1 bay leaf
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chicken pieces and cook for 6–8 minutes, turning occasionally, until lightly browned on all sides. Remove and set aside.
- In the same pot, sauté the chopped onion for about 3 minutes until soft.
- Add the minced garlic and cook for another 30 seconds.
- Add carrots, bell peppers, and potatoes. Cook for about 5 minutes, stirring occasionally.
- Stir in the grated tomatoes and tomato paste and mix well.
- Return the chicken to the pot and pour in the chicken broth.
- Season with paprika, salt, black pepper, cumin, and add the bay leaf.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 35 minutes.
- Add the green peas and cook for another 10 minutes until vegetables are tender and chicken is fully cooked.
- Taste and adjust seasoning if needed, then sprinkle chopped parsley before serving.
Notes
- Bone-in chicken adds more flavor to the broth.
- You can add zucchini, green beans, or mushrooms for additional vegetables.
- Mash a few potatoes in the stew if you prefer a thicker texture.
- A squeeze of lemon juice before serving brightens the flavor.
- This stew tastes even better the next day as the flavors develop.
