Ingredients
- 2 cups (250 g) all-purpose flour
- 1 3/4 cups (350 g) granulated sugar
- 3/4 cup (75 g) unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs, room temperature
- 1 cup (240 ml) whole milk, room temperature
- 1/2 cup (120 ml) vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup (240 ml) hot water
- 1 cup (175 g) chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line with parchment paper.
- In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed for about 2 minutes until smooth.
- Slowly pour in hot water and mix on low speed until fully incorporated. The batter will be thin.
- Fold in chocolate chips if using.
- Pour batter evenly into prepared pan.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
- Frost as desired or dust with powdered sugar before serving.
Notes
- Do not overbake to maintain moisture.
- Hot water enhances cocoa flavor and creates a tender crumb.
- Room temperature ingredients help create a smooth batter.
- Can be divided into two 9-inch round pans for a layer cake.
- Store tightly covered to keep the cake soft.
