Ingredients

  • 6 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1 cup honey
  • 1 cup powdered sugar

  • 1 cup semisweet chocolate chips
  • 1/2 cup creamy peanut butter

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a saucepan over low heat combine the peanut butter and honey.
  3. Stir continuously until the mixture becomes smooth and fully blended.
  4. Remove from heat and stir in the vanilla extract.
  5. Add the Rice Krispies cereal and gently fold until evenly coated.
  6. Sprinkle powdered sugar over the mixture and mix until incorporated.
  7. Transfer the mixture onto the parchment paper and press it into a rectangle about 1/2 inch thick.
  8. In a microwave-safe bowl combine chocolate chips and peanut butter.
  9. Microwave in 20–30 second intervals, stirring each time, until melted and smooth.
  10. Spread the chocolate mixture evenly over the cereal layer.
  11. Using the parchment paper as support carefully roll the cereal layer into a tight log.
  12. Place the roll in the refrigerator for about 1 hour until firm.
  13. Slice into rounds and serve.
