Ingredients
- 6 cups Rice Krispies cereal
- 1 cup creamy peanut butter
- 1 cup honey
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1/2 cup creamy peanut butter
Instructions
- Line a baking sheet with parchment paper.
- In a saucepan over low heat combine the peanut butter and honey.
- Stir continuously until the mixture becomes smooth and fully blended.
- Remove from heat and stir in the vanilla extract.
- Add the Rice Krispies cereal and gently fold until evenly coated.
- Sprinkle powdered sugar over the mixture and mix until incorporated.
- Transfer the mixture onto the parchment paper and press it into a rectangle about 1/2 inch thick.
- In a microwave-safe bowl combine chocolate chips and peanut butter.
- Microwave in 20–30 second intervals, stirring each time, until melted and smooth.
- Spread the chocolate mixture evenly over the cereal layer.
- Using the parchment paper as support carefully roll the cereal layer into a tight log.
- Place the roll in the refrigerator for about 1 hour until firm.
- Slice into rounds and serve.
Notes
- Roll the mixture while it is still slightly warm to prevent cracking.
- Use parchment paper to help shape the roll easily.
- Crunchy peanut butter can be used for added texture.
- Dark or milk chocolate can replace semisweet chocolate depending on preference.
- Chopped peanuts or almonds can be sprinkled on the chocolate layer before rolling.
