Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup cottage cheese
- 1 cup breadcrumbs or panko
- 2 tablespoons olive oil or cooking spray
Instructions
- Preheat oven to 400°F (200°C), or heat a skillet over medium heat with olive oil.
- Slice each chicken breast horizontally to create thinner cutlets.
- Season both sides of the cutlets with salt, pepper, garlic powder, and paprika.
- Place cottage cheese in a shallow bowl and breadcrumbs in another.
- Dip each cutlet into the cottage cheese to coat, then press into the breadcrumbs to form a crust.
- Arrange cutlets on a greased baking sheet or add to the heated skillet.
- Bake for 20 minutes, flipping halfway through, or pan-cook for 4–5 minutes per side until golden and cooked through.
- Let rest for a few minutes before serving.
Notes
- Mix grated Parmesan into breadcrumbs for extra flavor.
- Add chili powder or Italian herbs for a twist.
- Use crushed crackers instead of breadcrumbs for more crunch.
- Air fry at 375°F for 12–15 minutes for extra crispiness.
