Ingredients

  • 1/2 cup brown sugar
  • 1 1/2 tablespoons ground cinnamon
  • 2 medium apples, peeled and diced
  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • For the Glaze:
  • 1/2 cup powdered sugar
  • 12 tablespoons milk or cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a small bowl, mix brown sugar and cinnamon. Set aside.
  3. Peel and dice the apples, then toss them with a bit of the cinnamon-sugar mix.
  4. In a large bowl, cream the butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, then stir in vanilla extract.
  6. In another bowl, combine flour and baking powder.
  7. Gradually add dry ingredients to the wet mixture, alternating with milk.
  8. Pour half of the batter into the loaf pan. Add half the apple mixture and sprinkle with cinnamon-sugar. Repeat layers.
  9. Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  11. For the glaze, whisk together powdered sugar and milk until smooth, then drizzle over cooled bread.
