Cowboy Butter Chicken Bites are juicy, bite-sized chicken pieces marinated in a rich, spicy garlic butter and pan-seared to golden perfection. Served with a creamy Cajun dipping sauce, this 30-minute recipe makes for an irresistible appetizer or quick main dish.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together melted butter, garlic, lemon juice, smoked paprika, Cajun seasoning, red pepper flakes, salt, and black pepper.
  2. Add the chicken pieces and toss until fully coated. Marinate for at least 15 minutes.
  3. Heat a skillet over medium-high heat and cook the chicken for 6–8 minutes, stirring occasionally, until golden and fully cooked.
  4. While the chicken cooks, whisk together mayonnaise, sour cream, Cajun seasoning, garlic powder, smoked paprika, lemon juice, salt, and pepper in a small bowl to make the dipping sauce.
  5. Serve chicken bites hot, garnished with chopped parsley and with the dipping sauce on the side.

Notes

  • Substitute chicken thighs for a juicier texture.
  • Use Greek yogurt instead of sour cream for a lighter dip.
  • For extra heat, double the red pepper flakes or add hot sauce to the marinade.
  • Air fry chicken bites at 400°F for 10–12 minutes for a crispier texture.
  • Store dipping sauce in a sealed container in the fridge for up to 4 days.
