Ingredients
- 1 lb ground beef
- 1/2 onion, diced
- 1/2 green bell pepper, diced
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1 (10 oz) can diced tomatoes with green chilies
- 1 tsp garlic powder
- Salt and pepper, to taste
- 3 cups cooked egg noodles
- 2 cups shredded cheddar cheese, divided
- 1/4 cup chopped green onions, for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef with diced onion and bell pepper over medium heat until beef is browned and vegetables are tender. Drain excess grease.
- Stir in the cream of mushroom soup, cream of chicken soup, sour cream, diced tomatoes with green chilies, garlic powder, salt, and pepper. Mix until well combined.
- Fold in cooked egg noodles and 1 cup of shredded cheddar cheese until evenly coated.
- Transfer mixture to the prepared baking dish, spreading evenly. Top with remaining cheddar cheese.
- Bake for 25–30 minutes until hot and bubbly and cheese is melted and golden.
- Let cool slightly before garnishing with chopped green onions and serving.
Notes
- Use ground turkey or chicken as a lighter alternative to beef.
- Add hot sauce or chili flakes for more spice.
- Frozen peas or corn add extra texture and nutrition.
- Try different cheeses like Monterey Jack or Pepper Jack for variation.
- Can be made ahead and baked later, or frozen for future meals.
