Ingredients

  • 1 lb ground beef
  • 1/2 onion, diced
  • 1/2 green bell pepper, diced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 3 cups cooked egg noodles
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup chopped green onions, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, cook ground beef with diced onion and bell pepper over medium heat until beef is browned and vegetables are tender. Drain excess grease.
  3. Stir in the cream of mushroom soup, cream of chicken soup, sour cream, diced tomatoes with green chilies, garlic powder, salt, and pepper. Mix until well combined.
  4. Fold in cooked egg noodles and 1 cup of shredded cheddar cheese until evenly coated.
  5. Transfer mixture to the prepared baking dish, spreading evenly. Top with remaining cheddar cheese.
  6. Bake for 25–30 minutes until hot and bubbly and cheese is melted and golden.
  7. Let cool slightly before garnishing with chopped green onions and serving.
