Ingredients
- 500 g chicken breast, cut into medium pieces
- 2 tablespoons olive oil
- 3 tablespoons butter
- 5 cloves garlic, finely minced
- 1 small onion, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon paprika
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup grated parmesan cheese
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken pieces with salt, black pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5–6 minutes until golden brown on both sides. Remove the chicken and set aside.
- Reduce heat to medium and add butter to the same pan.
- Add the chopped onion and cook for 3–4 minutes until soft.
- Add minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth and scrape the browned bits from the bottom of the pan.
- Stir in the heavy cream, dried thyme, and dried parsley.
- Return the chicken to the skillet and simmer for 8–10 minutes until the chicken is cooked through and the sauce thickens.
- Stir in grated parmesan cheese and lemon juice.
- Cook for another 2 minutes until the sauce becomes smooth and creamy.
- Garnish with fresh parsley and serve warm.
Notes
- Boneless chicken thighs can be used instead of chicken breast for extra juiciness.
- Add sliced mushrooms when cooking the onions for a mushroom variation.
- Fresh spinach can be stirred in during the final minutes of cooking.
- If the sauce becomes too thick, add a small splash of milk or chicken broth.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently on the stovetop with a little milk or broth to maintain a creamy texture.
