Ingredients
- 2 boneless skinless chicken breasts
- 4 cups chicken broth
- 2 cups water
- 3 packs ramen noodles (seasoning packets discarded)
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 teaspoon fresh ginger, grated
- 1 teaspoon red pepper flakes (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 green onions, thinly sliced
- 2 tablespoons fresh cilantro, chopped (optional)
- 1 cup fresh spinach or bok choy
- 1/2 cup sliced bell peppers
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the chicken breasts with salt and black pepper.
- Cook the chicken in the pot for 5–7 minutes per side until golden and fully cooked.
- Remove the chicken from the pot and allow it to rest before slicing.
- In the same pot, sauté the minced garlic and grated ginger for 1–2 minutes until fragrant.
- Pour in the chicken broth and water and bring to a gentle simmer.
- Add the ramen noodles and cook for 4–5 minutes until tender.
- Stir in the heavy cream, soy sauce, and red pepper flakes.
- Add the cornstarch slurry and stir until the broth thickens slightly.
- Add spinach or bok choy and sliced bell peppers and cook for 1–2 minutes until softened.
- Slice the cooked chicken into thin strips.
- Divide the ramen into bowls and top with the sliced chicken.
- Garnish with green onions and fresh cilantro before serving.
Notes
- Discard the seasoning packets from instant ramen to control sodium levels.
- Add mushrooms, carrots, or corn for extra vegetables.
- For a dairy-free version, substitute the cream with coconut milk.
- Soft-boiled eggs make an excellent topping.
- If the broth thickens too much, add a splash of chicken broth while reheating.
