Ingredients

  • 2 boneless skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 3 packs ramen noodles (seasoning packets discarded)
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 cup fresh spinach or bok choy
  • 1/2 cup sliced bell peppers

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season the chicken breasts with salt and black pepper.
  3. Cook the chicken in the pot for 5–7 minutes per side until golden and fully cooked.
  4. Remove the chicken from the pot and allow it to rest before slicing.
  5. In the same pot, sauté the minced garlic and grated ginger for 1–2 minutes until fragrant.
  6. Pour in the chicken broth and water and bring to a gentle simmer.
  7. Add the ramen noodles and cook for 4–5 minutes until tender.
  8. Stir in the heavy cream, soy sauce, and red pepper flakes.
  9. Add the cornstarch slurry and stir until the broth thickens slightly.
  10. Add spinach or bok choy and sliced bell peppers and cook for 1–2 minutes until softened.
  11. Slice the cooked chicken into thin strips.
  12. Divide the ramen into bowls and top with the sliced chicken.
  13. Garnish with green onions and fresh cilantro before serving.

Notes

  • Discard the seasoning packets from instant ramen to control sodium levels.
  • Add mushrooms, carrots, or corn for extra vegetables.
  • For a dairy-free version, substitute the cream with coconut milk.
  • Soft-boiled eggs make an excellent topping.
  • If the broth thickens too much, add a splash of chicken broth while reheating.
