These crispy cheesy mozzarella stuffed onion rings feature thick onion slices filled with melty mozzarella, double-coated in seasoned breadcrumbs, and fried to golden perfection. Each bite delivers a crunchy exterior and gooey, stretchy cheese center.

  • Total Time: 1 hour 30 minutes
  • Yield: 4 servings

Ingredients

  • Main:
  • 1 large onion, sliced into 1/2-inch thick rings
  • 8 mozzarella cheese sticks, cut in half crosswise
  • For the coating:
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 1/2 cups panko breadcrumbs
  • 1 cup regular breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • For frying:
  • 3 cups vegetable oil

Instructions

  1. Slice onion into 1/2-inch thick rings and separate them. Pair similar-sized rings together.
  2. Place a half mozzarella stick between two matching onion rings to form a stuffed ring. Repeat with remaining rings.
  3. Arrange stuffed rings on a tray and freeze for at least 1 hour.
  4. Prepare three bowls: flour in the first; whisked eggs and milk in the second; breadcrumbs mixed with garlic powder, paprika, salt, and pepper in the third.
  5. Coat each frozen ring in flour, dip into egg mixture, then coat thoroughly with breadcrumb mixture.
  6. For extra crispiness, repeat the egg and breadcrumb coating.
  7. Heat vegetable oil to 350°F (175°C).
  8. Fry rings in batches for 2–3 minutes per side until golden brown.
  9. Remove with a slotted spoon and drain on paper towels.
  10. Serve immediately while hot and cheesy.

Notes

  • Freezing prevents cheese from leaking during frying.
  • Maintain oil temperature at 350°F for best crispiness.
  • Double coating ensures a thicker, crunchier crust.
  • Low-moisture mozzarella works best.
  • Best served immediately for optimal texture.
