Ingredients

  • 1 pound mild Italian sausage
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 teaspoons garlic, minced
  • 1½ teaspoons Italian seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ⅓ cup tomato paste
  • 6 cups low-sodium beef broth
  • 2 cans (14.5 ounces each) diced tomatoes
  • 12 ounces lasagna noodles, broken into bite-sized pieces
  • ½ cup heavy cream
  • 8 ounces ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, finely shredded

Instructions

  1. Heat a large skillet over medium-high heat. Add the Italian sausage and ground beef, breaking the meat apart as it cooks until fully browned.
  2. Drain excess grease and transfer the cooked meat to a 6-quart slow cooker.
  3. Add diced onion, minced garlic, Italian seasoning, black pepper, salt, tomato paste, beef broth, and diced tomatoes to the slow cooker. Stir well to combine.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. About 30 minutes before cooking is finished, stir in the broken lasagna noodles and heavy cream.
  6. Continue cooking until the noodles are tender.
  7. In a medium bowl, mix ricotta cheese, shredded mozzarella, and parmesan cheese to prepare the cheese topping.
  8. Ladle the hot soup into bowls and top each serving with a spoonful of the cheese mixture before serving.

Notes

  • Add vegetables like zucchini, bell peppers, spinach, or carrots for extra nutrition.
  • Ground turkey or ground chicken can replace the beef for a lighter version.
  • For a spicier soup, add red pepper flakes or use spicy Italian sausage.
  • If freezing the soup, cook and store it without the noodles and cheese topping, then add them when reheating.
