Ingredients
- 1 pound mild Italian sausage
- 1 pound ground beef
- 1 medium yellow onion, diced
- 3 teaspoons garlic, minced
- 1½ teaspoons Italian seasoning
- 1 teaspoon black pepper
- 1 teaspoon salt
- ⅓ cup tomato paste
- 6 cups low-sodium beef broth
- 2 cans (14.5 ounces each) diced tomatoes
- 12 ounces lasagna noodles, broken into bite-sized pieces
- ½ cup heavy cream
- 8 ounces ricotta cheese
- 1 cup mozzarella cheese, shredded
- ½ cup parmesan cheese, finely shredded
Instructions
- Heat a large skillet over medium-high heat. Add the Italian sausage and ground beef, breaking the meat apart as it cooks until fully browned.
- Drain excess grease and transfer the cooked meat to a 6-quart slow cooker.
- Add diced onion, minced garlic, Italian seasoning, black pepper, salt, tomato paste, beef broth, and diced tomatoes to the slow cooker. Stir well to combine.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- About 30 minutes before cooking is finished, stir in the broken lasagna noodles and heavy cream.
- Continue cooking until the noodles are tender.
- In a medium bowl, mix ricotta cheese, shredded mozzarella, and parmesan cheese to prepare the cheese topping.
- Ladle the hot soup into bowls and top each serving with a spoonful of the cheese mixture before serving.
Notes
- Add vegetables like zucchini, bell peppers, spinach, or carrots for extra nutrition.
- Ground turkey or ground chicken can replace the beef for a lighter version.
- For a spicier soup, add red pepper flakes or use spicy Italian sausage.
- If freezing the soup, cook and store it without the noodles and cheese topping, then add them when reheating.
- If the soup becomes too thick, add additional beef broth to loosen the consistency.
