Ingredients
- ½ cup all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, melted
- 2 cups milk
- 4 large eggs
- 1 cup sweetened shredded coconut
- 1 tablespoon vanilla extract
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a pie dish.
- In a large bowl, whisk together the melted butter and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract until well combined.
- Mix in the flour and salt, ensuring no lumps remain.
- Fold in the shredded coconut.
- Pour the batter into the prepared pie dish.
- Bake for 45 to 50 minutes, until the center is set and the top is lightly golden.
- Allow to cool before slicing to let the pie firm up.
Notes
- For a smoother custard pie, omit the coconut.
- Add a pinch of nutmeg or cinnamon for extra flavor.
- Use unsweetened coconut for a less sweet version.
- Replace part of the milk with half-and-half for added richness.
- Serve warm, chilled, or at room temperature.
