Ingredients

  • 4 large russet potatoes or frozen fries

  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1 small red onion, finely diced
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 1 jalapeño, thinly sliced (optional)
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 teaspoon dried oregano
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder (for sauce)
  • 1/2 teaspoon smoked paprika (for sauce)

Instructions

  1. Preheat oven to 425°F (220°C). If using fresh potatoes, cut into fries and soak in cold water for 30 minutes, then dry thoroughly.
  2. Toss fries with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Bake fries in a single layer on a sheet pan for 25–30 minutes, flipping halfway through. Alternatively, air fry at 375°F (190°C) for 15–20 minutes.
  4. While fries cook, sauté onions and bell peppers in a skillet with olive oil until soft and caramelized.
  5. Once fries are crispy, transfer to an oven-safe dish. Sprinkle with cheddar and mozzarella. Bake until cheese melts and bubbles.
  6. Top with sautéed vegetables, jalapeños, chili flakes, and oregano.
  7. Mix sour cream, mayo, lemon juice, garlic powder, and smoked paprika to make the sauce.
  8. Drizzle sauce over fries and garnish with parsley or cilantro. Serve immediately.
