  • Total Time: 1 hour
  • Yield: 6–8 servings

Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 1/2 cup plain breadcrumbs
  • 1 large egg, beaten
  • 1/2 cup whole milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • For the Gravy:
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, salt, pepper, onion powder, and garlic powder. Mix gently until just combined.
  3. Shape mixture into 6–8 oval patties.
  4. Arrange patties in a single layer in the prepared baking dish.
  5. In a saucepan over medium heat, melt butter. Whisk in flour and cook 1–2 minutes until lightly golden.
  6. Gradually whisk in beef broth. Add milk, salt, pepper, and thyme. Stir constantly until smooth and thickened, about 4–5 minutes.
  7. Pour gravy evenly over the patties.
  8. Cover with foil and bake 30 minutes.
  9. Remove foil and bake an additional 15–20 minutes until beef reaches 160°F (71°C) and gravy is bubbling.
  10. Let rest 5 minutes before serving.

Notes

  • Do not overmix the beef to keep patties tender.
  • 80/20 beef provides best flavor and moisture.
  • Add mushrooms to the gravy for extra depth.
  • Store refrigerated up to 4 days.
  • Dish can be frozen up to 3 months.
