Easy Bat Cupcakes are a fun and festive Halloween dessert. Moist chocolate cupcakes are topped with rich chocolate frosting and decorated with Oreo wings and candy eyeballs, making them spooky, cute, and delicious.

Ingredients

  • For the Chocolate Cupcakes:
    • 1 box chocolate cake mix
    • ½ cup salted butter, softened
    • 3 large eggs
    • ¼ cup sour cream
    • 1 cup milk
    • 1 teaspoon vanilla extract
  • For the Frosting:
    • 1 cup salted butter, softened
    • ½ cup unsweetened cocoa powder
    • ½ cup hot water or heated heavy cream
    • 2 cups powdered sugar
    • 4 ounces semi-sweet baking bar, melted and cooled
  • For the Decorations:
    • 1 package regular Oreos
    • 1 package mini Oreos
    • 20 pairs candy eyeballs

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, mix cake mix, softened butter, eggs, sour cream, milk, and vanilla until smooth. Divide into liners, filling 2/3 full. Bake 18–22 minutes or until a toothpick comes out clean. Cool completely.
  3. For the frosting: Beat butter until creamy. Mix in cocoa powder, then slowly add hot water or cream. Beat in powdered sugar until fluffy. Stir in melted chocolate until fully incorporated.
  4. Frost cooled cupcakes generously.
  5. For decorations: Twist Oreos apart and cut halves into curved pieces for wings. Press into frosting. Place a mini Oreo in the center for the bat’s head. Add two candy eyeballs on top of the mini Oreo.

Notes

  • Use devil’s food cake mix for extra chocolate flavor.
  • Swap chocolate frosting for cream cheese frosting if preferred.
  • Any round chocolate cookie works if Oreos aren’t available.
  • Make candy eyes using white chocolate chips and black gel if needed.
  • Bake cupcakes a day in advance and decorate before serving.
