Ingredients

  • Pinch of salt (optional)
  • 1½ cups strong coffee or espresso, cooled
  • 2 packages Biscoff cookies

Instructions

  1. Make the cream mixture: In a bowl, whisk together mascarpone, Biscoff cookie butter, sugar, vanilla, and salt until smooth (30–60 seconds).
  2. Whip the cream: Add the cold heavy cream and whisk again until stiff peaks form and the mixture becomes fluffy and pipeable.
  3. Layer the cookies: Quickly dip Biscoff cookies into coffee (1–2 seconds each) and place two layers of cookies at the bottom of your dish or dessert cups.
  4. Spread the cream: Spoon or pipe half of the cream mixture over the cookies and spread evenly.
