Ingredients
- 500g ground beef (mince)
- 2 cups frozen mixed peas, carrots, corn, and potato
- 1 onion, finely chopped
- 2 tbsp oil
- 1–2 tsp curry powder or garam masala
- 1/2 tsp turmeric
- 1/2 tsp ground coriander
- Chili powder, to taste
- Salt, to taste
- Fresh or frozen party pie pastry shells (6–8)
- 1 beaten egg (for egg wash)
Instructions
- Heat oil in a pan over medium heat and sauté chopped onion until soft and translucent.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in curry powder, turmeric, coriander, chili powder, and salt. Cook spices for 1–2 minutes.
- Add frozen vegetables and cook until heated through and slightly thickened. Let filling cool slightly.
- Preheat air fryer to 180°C (360°F).
- Fill each pastry shell with the beef curry mixture. Brush edges with egg wash and seal tops.
- Place pies in air fryer basket without overlapping. Air-fry for 15–20 minutes until golden and crisp.
- Let cool slightly before serving.
Notes
- Use puff pastry for flaky results or shortcrust for a sturdier pie.
- Cool filling before assembling to prevent soggy pastry.
- Try ground lamb or chicken as a tasty alternative to beef.
- Reheat leftovers in air fryer to restore crispiness.
- Bake in oven at 180°C for 25–30 minutes if no air fryer is available.
