Ingredients

  • 500g ground beef (mince)
  • 2 cups frozen mixed peas, carrots, corn, and potato
  • 1 onion, finely chopped
  • 2 tbsp oil
  • 12 tsp curry powder or garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp ground coriander
  • Chili powder, to taste
  • Salt, to taste
  • Fresh or frozen party pie pastry shells (6–8)
  • 1 beaten egg (for egg wash)

Instructions

  1. Heat oil in a pan over medium heat and sauté chopped onion until soft and translucent.
  2. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Stir in curry powder, turmeric, coriander, chili powder, and salt. Cook spices for 1–2 minutes.
  4. Add frozen vegetables and cook until heated through and slightly thickened. Let filling cool slightly.
  5. Preheat air fryer to 180°C (360°F).
  6. Fill each pastry shell with the beef curry mixture. Brush edges with egg wash and seal tops.
  7. Place pies in air fryer basket without overlapping. Air-fry for 15–20 minutes until golden and crisp.
  8. Let cool slightly before serving.
