Ingredients

  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil for frying (about 2 cups)
  • 4 sandwich buns or brioche rolls
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced pickles
  • Tartar sauce or creamy sauce of choice

Instructions

  1. Pat cod fillets dry and season both sides with salt and pepper.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko, cornmeal, paprika, garlic powder, salt, and pepper.
  3. Dredge fillets in flour, then egg, then panko mixture, pressing gently to coat.
