Soft, cheesy, and flavor-packed, these Garlic Bread Meatball Bombs wrap tender meatballs and gooey mozzarella in buttery garlic dough—perfect for parties, snacking, or family dinners.

  • Total Time: 35 minutes
  • Yield: 6 servings (2 meatball bombs per serving)

Ingredients

  • Garlic Butter:
  • 6 tablespoons unsalted butter, melted
  • 2 teaspoons grated garlic (from 2 to 3 garlic cloves)
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Meatball Bombs:
  • 12 Italian-style beef meatballs, fully cooked
  • 8 ounces whole mozzarella cheese, cut into 12 cubes
  • 1/2 cup marinara sauce, plus more for dipping
  • 12 refrigerated dinner rolls (about 1 pound dough total)
  • Topping:
  • 2 tablespoons grated cheese
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a small bowl, mix melted butter, grated garlic, Italian seasoning, salt, and pepper. Set aside.
  3. Flatten each dinner roll into a 4-inch circle.
  4. Place a meatball in the center of each dough circle. Add 1 teaspoon marinara sauce and a cube of mozzarella on top of each meatball.
  5. Wrap the dough around the filling and seal tightly. Place seam-side down in the baking dish.
  6. Brush tops generously with garlic butter and sprinkle with grated cheese.
  7. Bake for 18–22 minutes until golden and cooked through.
  8. Remove from oven and sprinkle with chopped parsley. Serve warm with extra marinara sauce.

Notes

  • Use turkey or chicken meatballs for a lighter option.
  • Add red pepper flakes to the butter for heat.
  • Swap mozzarella with provolone or cheddar for variation.
  • Ensure dough is well sealed to prevent cheese leakage.
