Ingredients

  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour

  • ¼ teaspoon salt
  • 2 tablespoons milk (optional)
  • Powdered sugar or cocoa powder for dusting
  • ⅔ cup evaporated milk
  • ⅔ cup granulated sugar (for filling)
  • 2 large egg yolks
  • ⅓ cup unsalted butter, softened
  • ¾ cup sweetened shredded coconut
  • ⅔ cup chopped pecans
  • 1 teaspoon vanilla extract (for filling)
  • 2 oz semisweet or dark chocolate, chopped
  • 3 tablespoons heavy cream
  • Optional: extra shredded coconut, chopped pecans, or chocolate shavings for garnish

Instructions

  1. Preheat oven to 350°F (180°C). Line a 15×10-inch jelly-roll pan with parchment and lightly grease it.
  2. Beat eggs, sugar, and vanilla until pale and thick (3–5 minutes).
  3. In a separate bowl, whisk flour, cocoa powder, baking powder, and salt.
  4. Fold dry ingredients into egg mixture until combined. Stir in milk if using.
  5. Spread batter evenly in pan and bake for 9–12 minutes until it springs back when touched.
  6. Dust the hot cake with powdered sugar or cocoa. Invert onto a towel or parchment, peel off paper, and roll from the short side. Let cool fully while rolled.
  7. Make filling: Heat evaporated milk, sugar, yolks, and butter in saucepan over medium, stirring until thickened. Remove from heat, stir in coconut, pecans, and vanilla. Cool completely.
  8. Unroll cake, spread filling evenly, and re-roll without towel.
  9. Make ganache: Heat cream, pour over chocolate, let sit 1 minute, then stir until smooth. Cool slightly and spread over cake roll.
  10. Garnish as desired and chill until ganache sets (about 30 minutes). Slice with serrated knife, wiping between cuts.
