Ingredients

  • 23 medium zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or cooking spray
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons grated Parmesan cheese for topping

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Wash and dry the zucchini and cut them into fry-shaped sticks about 3–4 inches long and about 1/2 inch thick.
  3. Prepare three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and black pepper.
  4. Dip each zucchini stick into the flour and shake off the excess.
  5. Next dip it into the beaten eggs until fully coated.
  6. Roll the zucchini stick in the panko-Parmesan mixture, pressing gently so the coating sticks.
  7. Place the coated zucchini fries in a single layer on the prepared baking sheet.
  8. Lightly drizzle with olive oil or spray with cooking spray to help them crisp.
  9. Bake for 18–22 minutes, turning halfway through baking, until golden and crispy.
  10. Remove from the oven and sprinkle with chopped parsley, basil, and extra Parmesan cheese.
  11. Serve immediately while hot and crispy.

Notes

  • Pat the zucchini dry before coating to help the fries crisp properly.
  • Panko breadcrumbs provide the best crispy texture.
  • For extra heat add cayenne pepper or chili powder to the coating.
  • These fries can also be cooked in an air fryer at 400°F for 10–12 minutes.
  • Serve with marinara, ranch, garlic yogurt sauce, or lemon aioli.
  • Use medium firm zucchini for the best results.
