Rich and indulgent gooey cream cheese cake bars with a buttery cake base and a smooth, creamy topping that melts in your mouth—perfect for an easy bakery-style dessert at home.

  • Total Time: 2 hours
  • Yield: 12–16 bars

Ingredients

  • For the base:
  • 1 box yellow cake mix (about 430 g)
  • 120 g unsalted butter, melted
  • 1 large egg
  • For the cream cheese layer:
  • 225 g cream cheese, softened
  • 2 large eggs
  • 400 g powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 175°C (350°F) and grease or line a 23×33 cm (9×13 inch) baking dish.
  2. In a bowl, mix the cake mix, melted butter, and 1 egg until a thick dough forms.
  3. Press the dough evenly into the bottom of the prepared baking dish.
  4. In another bowl, beat the softened cream cheese until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract, then gradually mix in the powdered sugar until smooth.
  7. Pour the cream cheese mixture over the base and spread evenly.
  8. Bake for 35–40 minutes until the edges are set and lightly golden while the center remains slightly gooey.
  9. Remove from the oven and allow to cool completely in the pan.
  10. Slice into bars and serve.

Notes

  • The center should remain slightly gooey for the best texture.
  • Use full-fat cream cheese for a richer flavor and smoother consistency.
  • Chill before cutting for cleaner slices.
  • Try chocolate or red velvet cake mix for variation.
  • Add citrus zest for a fresh flavor twist.
  • Swirl jam or chocolate spread into the top layer before baking for added flavor.
  • Store in the refrigerator for up to 5 days.
  • Freeze individually wrapped bars for up to 2 months.
