Gooey Golden S’mores Rolls are soft, fluffy sweet rolls filled with rich chocolate and graham cracker crumbs, then topped with a light toasted meringue for a warm dessert inspired by classic campfire s’mores.

Ingredients

  • 1 cup lukewarm milk
  • 1/4 cup lukewarm water
  • 2 1/4 teaspoons instant yeast
  • 1/4 cup granulated sugar
  • 3 3/4 cups all-purpose flour
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon salt
  • 1/8 cup unsweetened cocoa powder
  • 1/8 cup heavy whipping cream
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup graham cracker crumbs
  • 2 large egg whites, room temperature
  • 1/2 cup granulated sugar
  • 1/8 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a small bowl combine lukewarm milk and water. Sprinkle yeast and sugar over the liquid and let sit for 5 to 10 minutes until foamy.
  2. In a large bowl mix the flour and salt. Add the yeast mixture and softened butter and mix until a soft dough forms.
  3. Knead the dough on a lightly floured surface for 8 to 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise for about 1 hour until doubled in size.
  5. Prepare the filling by mixing cocoa powder, heavy cream, chocolate chips, and graham cracker crumbs in a bowl until combined.
  6. Punch down the risen dough and roll it into a rectangle about 1/4 inch thick.
  7. Spread the chocolate filling evenly over the dough leaving a small border around the edges.
  8. Roll the dough tightly into a log from the long side and cut into 12 equal rolls.
  9. Arrange the rolls in a greased baking dish, cover, and let rise for about 30 minutes.
  10. Preheat the oven to 350°F (175°C) and bake the rolls for 25 to 30 minutes until golden.
  11. While baking, beat egg whites with cream of tartar and salt until foamy. Gradually add sugar and beat until stiff peaks form, then mix in vanilla.
  12. Remove the rolls from the oven and spread the meringue topping over them, forming soft peaks.
  13. Return to the oven and bake for 10 to 12 minutes until the topping is lightly toasted.
  14. Allow the rolls to cool slightly before serving so the filling becomes thick and gooey.
