  • Total Time: 35 minutes
  • Yield: 4 burritos

Ingredients

  • 1 lb ground beef (85% lean)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 packet taco seasoning (or homemade)
  • 1 cup cooked fried rice (or plain rice)
  • 1/2 cup nacho cheese sauce
  • 1/2 cup crushed crunchy tortilla chips
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • Optional: sour cream, salsa, or guacamole for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onion until soft.
  2. Add ground beef and cook until browned. Break up the meat as it cooks.
  3. Stir in taco seasoning with a splash of water. Simmer until flavors combine.
  4. Warm rice and nacho cheese sauce in separate pans or microwave.
  5. Lay one tortilla flat and layer rice, seasoned beef, nacho cheese, and crushed chips in the center.
  6. Fold the tortilla into a burrito, tucking the sides in tightly.
  7. Sprinkle shredded cheddar cheese in a clean skillet and place the burrito seam-side down over the cheese.
  8. Grill until the cheese forms a crispy crust. Flip and briefly grill the other side.
  9. Let burrito rest for 1 minute before slicing and serving with desired toppings.

Notes

  • Use ground turkey, shredded chicken, or black beans as protein alternatives.
  • Try different cheeses like pepper jack or Monterey Jack for variety.
  • For added heat, mix in jalapeños or a drizzle of hot sauce.
  • To lower carbs, skip the rice and chips and use low-carb tortillas.
  • Add bell peppers or corn for extra veggies and texture.
