Ingredients
- 1 lb ground beef (85% lean)
- 2 tbsp olive oil
- 1 medium onion, diced
- 1 packet taco seasoning (or homemade)
- 1 cup cooked fried rice (or plain rice)
- 1/2 cup nacho cheese sauce
- 1/2 cup crushed crunchy tortilla chips
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- Optional: sour cream, salsa, or guacamole for serving
Instructions
- Heat olive oil in a skillet over medium heat. Sauté diced onion until soft.
- Add ground beef and cook until browned. Break up the meat as it cooks.
- Stir in taco seasoning with a splash of water. Simmer until flavors combine.
- Warm rice and nacho cheese sauce in separate pans or microwave.
- Lay one tortilla flat and layer rice, seasoned beef, nacho cheese, and crushed chips in the center.
- Fold the tortilla into a burrito, tucking the sides in tightly.
- Sprinkle shredded cheddar cheese in a clean skillet and place the burrito seam-side down over the cheese.
- Grill until the cheese forms a crispy crust. Flip and briefly grill the other side.
- Let burrito rest for 1 minute before slicing and serving with desired toppings.
Notes
- Use ground turkey, shredded chicken, or black beans as protein alternatives.
- Try different cheeses like pepper jack or Monterey Jack for variety.
- For added heat, mix in jalapeños or a drizzle of hot sauce.
- To lower carbs, skip the rice and chips and use low-carb tortillas.
- Add bell peppers or corn for extra veggies and texture.
