Cattle Drive Casserole is a hearty baked dish featuring seasoned ground beef, vegetables, a soft biscuit base, and a creamy topping finished with salsa and melted cheese for a comforting family-style meal.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 1/2 cups biscuit baking mix
  • 1 cup water
  • Cooking spray for greasing
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 1/2 cups shredded cheddar or fiesta blend cheese, divided
  • 1 teaspoon garlic powder
  • 1/2 cup mild salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, cook the ground beef while breaking it apart until fully browned. Drain excess fat.
  3. In a bowl, mix the biscuit baking mix and water until a soft dough forms.
  4. Grease a 9×13-inch baking dish with cooking spray and press the dough evenly across the bottom.
  5. Bake the dough base for 5–8 minutes until lightly set and golden, then remove from the oven.
  6. Add the chopped onion and bell pepper to the skillet with the cooked beef and cook for about 4 minutes until softened.
  7. Stir in the taco seasoning and mix well.
  8. Spread the beef and vegetable mixture evenly over the biscuit base.
  9. In a bowl, combine sour cream, mayonnaise, diced green chiles, 3/4 cup shredded cheese, and garlic powder. Mix until smooth.
  10. Spread the creamy mixture evenly over the beef layer.
  11. Spoon small dollops of salsa across the top and sprinkle with the remaining shredded cheese.
  12. Bake uncovered for about 30 minutes until hot, bubbly, and lightly golden.
  13. Let the casserole rest for about 5 minutes before slicing and serving.

Notes

  • Drain excess fat from the beef to prevent a greasy casserole.
  • Cheddar or fiesta blend cheese works best for melting and flavor.
  • Add corn or black beans for a southwestern-style variation.
  • Greek yogurt can replace sour cream for a lighter option.
  • Let the casserole rest briefly after baking so it slices neatly.
