  • Total Time: 50 minutes
  • Yield: undefined

Ingredients

Brownie Base:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Cookie Dough Layer:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips

Topping:

  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan or line with mini paper liners.
  2. Prepare brownie batter: mix melted butter and sugar until smooth. Add eggs and vanilla extract, whisk until combined.
  3. Sift in cocoa powder, flour, salt, and baking powder; stir until thick and uniform.
  4. Spoon ~1 tablespoon brownie batter into each muffin cavity, filling two-thirds full.
  5. Bake 10–12 minutes until tops are set; toothpick should come out with a few moist crumbs. Cool completely in the pan.
  6. Prepare cookie dough layer: beat softened butter with brown and granulated sugar until creamy. Add milk and vanilla; mix until smooth.
  7. Stir in flour and salt until soft dough forms; fold in mini chocolate chips.
  8. Once brownies are cooled, scoop and gently press cookie dough on top of each brownie bite.
  9. Sprinkle additional mini chocolate chips over cookie dough layer; press lightly to stick.
  10. Serve immediately or chill slightly to firm the cookie dough layer.

Notes

  • Optional mix-ins: chopped walnuts, pecans, white chocolate chips, or candy pieces.
  • For extra decadence, drizzle melted chocolate over the finished bites or add a thin ganache layer between brownie and cookie dough.
  • Cookie dough is egg-free and safe to eat without baking.
  • Mini muffin liners help prevent sticking and make removal easier.
