A vibrant Mexican dessert made with colorful cubes of fruity gelatin suspended in a creamy milk gelatin, creating a beautiful mosaic pattern that is refreshing, sweet, and perfect for celebrations.

Ingredients

  • 7 cups water, divided
  • 3 boxes flavored gelatin (3 ounces each, different flavors and colors)
  • 1 ounce unflavored gelatin (4 envelopes of 0.25 ounces each)
  • 1 cup half and half
  • 14 ounces sweetened condensed milk
  • 12 ounces evaporated milk
  • 1 teaspoon vanilla extract
  • Nonstick cooking spray

Instructions

  1. Heat 1 cup of water for each flavored gelatin until hot.
  2. Pour the hot water into separate bowls and dissolve one box of flavored gelatin in each bowl.
  3. Add 1/2 cup cold water to each mixture and stir well.
  4. Pour each gelatin mixture into separate containers and refrigerate for at least 4 hours or overnight until fully set.
  5. Remove the firm gelatin from the containers and cut into 1-inch cubes.
  6. In a small bowl, combine the unflavored gelatin with 1 cup cold water and let it sit for 10 minutes to bloom.
  7. In a blender, combine half and half, sweetened condensed milk, evaporated milk, and vanilla extract. Blend until smooth.
  8. Heat the bloomed gelatin in the microwave for 30–40 seconds until liquid.
  9. Add the melted gelatin to the blender and blend briefly to combine.
  10. Lightly coat a bundt pan with nonstick cooking spray.
  11. Pour a thin layer of milk gelatin into the pan, then add a layer of colorful gelatin cubes.
  12. Continue alternating layers until all ingredients are used.
  13. Refrigerate for at least 4 hours or overnight until completely set.
  14. To serve, gently loosen the edges, invert the pan onto a serving plate, and carefully release the gelatin before slicing.

  • Using contrasting gelatin colors creates a more vibrant mosaic appearance.
  • Prepare the gelatin cubes a day ahead for easier assembly.
  • Heavy cream can replace half and half for a richer texture.
