Ingredients
- 1/2 cup salted butter
- 15 ounces mini marshmallows, divided (reserve 1 cup)
- 1 teaspoon pure vanilla extract
- 9 cups Rice Krispies cereal
- Pinch of salt (optional, if using unsalted butter)
Instructions
- Grease a 9×13-inch baking pan with butter or line it with parchment paper.
- In a large saucepan, melt the butter over low heat.
- Add the mini marshmallows, reserving 1 cup for later, and stir until fully melted and smooth.
- Remove the saucepan from the heat and stir in the vanilla extract. Add a pinch of salt if using unsalted butter.
- Add the Rice Krispies cereal and the reserved 1 cup of mini marshmallows.
- Gently fold the mixture until the cereal is evenly coated.
- Transfer the mixture to the prepared pan.
- Using a buttered spatula, wax paper, or lightly buttered hands, gently press the mixture into an even layer without packing it too firmly.
- Allow the treats to cool and set at room temperature for about 1 hour.
- Cut into 12 squares and serve.
Notes
- Avoid overheating the marshmallows to keep the treats soft and chewy.
- Press the mixture gently into the pan to prevent hard bars.
- Add sprinkles, chocolate candies, or crushed cookies for fun variations.
- Drizzle melted chocolate or white chocolate over cooled bars for extra flavor.
- Melt a few tablespoons of peanut butter with the butter for a peanut butter version.
- Lightly butter your spatula or hands to prevent sticking when pressing the mixture.
- Let the bars cool completely before cutting for cleaner squares.
