Soft corn pupusas filled with melty cheese and creamy beans, pan-cooked until golden and comforting.

Ingredients

  • 2 cups masa harina (white or yellow)
  • 1 teaspoon chicken bouillon granules (optional)
  • 1/2 teaspoon salt
  • 1 1/2 to 2 cups boiling water
  • 2 tablespoons butter or lard, softened
  • Vegetable oil, for cooking
  • 1 cup shredded mozzarella cheese or Oaxaca cheese
  • 1 cup refried beans (optional)

Instructions

  1. In a large bowl, mix masa harina, salt, and chicken bouillon (if using).
  2. Gradually add boiling water while mixing until a smooth dough forms. Let rest briefly.
  3. Knead in butter or lard until the dough is soft and slightly sticky.
  4. With lightly oiled and wet hands, divide dough into 12 equal balls and keep covered.
  5. Flatten one dough ball into a disk, add beans and cheese to the center.
  6. Fold edges over filling, seal, and gently flatten into a thin disk.
  7. Heat a lightly oiled skillet or griddle over medium heat.
  8. Cook pupusas for about 3 minutes per side until golden and cheese is melted.
  9. Serve warm.

Notes

  • Keep dough covered to prevent drying.
  • Use damp fingers to smooth cracks when shaping.
  • Pupusas can be frozen partially cooked for later use.
