Ingredients
- 2 cups masa harina (white or yellow)
- 1 teaspoon chicken bouillon granules (optional)
- 1/2 teaspoon salt
- 1 1/2 to 2 cups boiling water
- 2 tablespoons butter or lard, softened
- Vegetable oil, for cooking
- 1 cup shredded mozzarella cheese or Oaxaca cheese
- 1 cup refried beans (optional)
Instructions
- In a large bowl, mix masa harina, salt, and chicken bouillon (if using).
- Gradually add boiling water while mixing until a smooth dough forms. Let rest briefly.
- Knead in butter or lard until the dough is soft and slightly sticky.
- With lightly oiled and wet hands, divide dough into 12 equal balls and keep covered.
- Flatten one dough ball into a disk, add beans and cheese to the center.
- Fold edges over filling, seal, and gently flatten into a thin disk.
- Heat a lightly oiled skillet or griddle over medium heat.
- Cook pupusas for about 3 minutes per side until golden and cheese is melted.
- Serve warm.
Notes
- Keep dough covered to prevent drying.
- Use damp fingers to smooth cracks when shaping.
- Pupusas can be frozen partially cooked for later use.
