Ingredients
- 4 large pasteurized eggs
- 1/3 cup granulated sugar
- 1/8 teaspoon ground nutmeg
- 2 tablespoons lemon juice
- 1/8 teaspoon salt
- 4 cups 2% milk
- 1/2 cup heavy cream
Instructions
- Easy Version: In a large bowl, beat eggs until thick and pale. Add sugar, nutmeg, lemon juice, and salt. Mix well.
- Pour in milk and heavy cream, then beat for 1–2 minutes until frothy. Chill before serving and garnish with a pinch of nutmeg.
- Cooked Version: In a saucepan, heat milk and cream over medium heat until warm (not boiling).
- In a separate bowl, beat eggs until pale. Slowly whisk in some of the warm milk to temper, then return mixture to saucepan.
- Add sugar, nutmeg, and salt. Cook over medium-low heat, stirring constantly, until slightly thickened.
- Transfer to a container and chill. Thin with extra milk if needed before serving.
Notes
- Add a splash of whiskey or rum for an adult version.
- Use vanilla extract for a sweeter, dessert-style drink.
- Swap some milk for more cream to make it richer.
- Top with whipped cream for festive presentation.
- Stir well before serving after refrigeration.
