Ingredients

  • 2 cups cooked chicken, shredded or diced
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups cooked diced potatoes or hash browns
  • 1 1/2 cups crushed cornflakes or buttery crackers
  • 3 tablespoons melted butter

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, mix cooked chicken with salt, pepper, garlic powder, and paprika.
  3. Add cream of chicken soup, sour cream, and 1 cup of shredded cheddar cheese. Mix until well combined.
  4. Fold in cooked potatoes and spread the mixture evenly into the prepared baking dish.
  5. In a separate bowl, mix crushed cornflakes or crackers with melted butter. Sprinkle evenly over the top of the casserole.
  6. Top with remaining 1/2 cup shredded cheddar cheese.
  7. Bake uncovered for 35 minutes or until hot, bubbly, and golden on top.
  8. Let rest for a few minutes before serving.
