Ingredients
1 lb (450 g) carrots, peeled and cut into sticks
3 tbsp butter, melted
2 tbsp honey
3 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1 tsp fresh thyme or parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine melted butter, honey, minced garlic, salt, and black pepper.
- Toss the carrot sticks in the butter mixture until evenly coated.
- Spread carrots in a single layer on a baking sheet.
- Roast for 20–25 minutes, turning halfway through, until tender and caramelized.
- Sprinkle with fresh thyme or parsley before serving, if desired.
Notes
- For a vegan version, substitute butter with plant-based butter.
- Maple syrup can be used instead of honey.
- Try adding a pinch of cinnamon or smoked paprika for extra flavor.
- Baby carrots can be used instead of cut carrots.
- Leftovers can be stored in an airtight container in the fridge for up to 4 days.
