Ingredients
1 sheet puff pastry, thawed
4 oz Brie cheese, sliced thin
1/2 cup fresh blackberries
2 tbsp honey
1 tsp fresh rosemary, chopped
1 egg (for egg wash)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out puff pastry until smooth.
- Arrange sliced Brie evenly over the pastry.
- Scatter blackberries across the top.
- Drizzle with honey and sprinkle chopped rosemary.
- Roll the pastry tightly into a log, then chill for 10–15 minutes to firm up.
- Slice into 12 even swirls and place them on the prepared baking sheet.
- Brush tops with egg wash.
- Bake for 15–20 minutes or until golden and puffed.
- Serve warm.
Notes
- Chill the rolled log before slicing for cleaner cuts.
- Substitute blackberries with raspberries or chopped figs.
- Use goat cheese or Camembert instead of Brie, if preferred.
- Add chopped nuts for extra texture.
- Store leftovers in the fridge and reheat in oven to restore crispness.
