Ingredients

  • 3 cups cake flour

  • 1/2 teaspoon vanilla extract (optional glaze)

Instructions

  1. Preheat the oven to 325°F (165°C) and grease and flour a bundt or loaf pan.
  2. In a medium bowl, whisk together cake flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Alternately add the dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix just until smooth.
  6. Reserve 1 cup of the batter and mix it with cocoa powder, blue food coloring, and 1 tablespoon milk to create the blue velvet swirl.
  7. Pour half of the vanilla batter into the prepared pan. Spoon the blue batter over it, then top with the remaining vanilla batter.
  8. Gently swirl the batters with a knife or skewer for a marbled effect.
  9. Bake for 75 to 85 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool the cake in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
  11. If using the glaze, whisk together powdered sugar, milk or cream, and vanilla extract. Drizzle over the cooled cake before serving.
